Spicy Skillet Breakfast Potatoes

4 medium-sized Russet potatoes, diced

1-2 jalapenos, seeded and chopped

1/2 medium onion, chopped

8 cloves of garlic, minced

2 tbsp of oil (olive or vegetable)

Seasoning (to taste)

Paprika

Cayenne Pepper

Salt

Pepper

Instructions:

In a large skillet, heat the oil over medium heat.

Add the diced potatoes to the skillet and cook for about 10-12 minutes, stirring occasionally, until they are golden brown and crispy.

Add the chopped jalapenos, chopped onion, and minced garlic to the skillet and continue to cook for another 5-7 minutes, until the onions are soft and translucent.

Stir in the salt, black pepper, and cayenne pepper, and cook for an additional 1-2 minutes.

Serve the spicy skillet breakfast potatoes hot, garnished with chopped fresh herbs (such as parsley or cilantro), if desired. Enjoy!
